Controlled Feeding Study: Determining the Effects of Carbohydrate and Cheese on Health

Purpose:

The purpose of this study to determine the effects of high cheese diets varying in carbohydrate content on markers of disease risk. These findings will help determine the role of cheese and carbohydrate as part of a healthy diet for individuals at risk of developing diabetes.

Eligibility criteria:

You may be eligible for this study if you:
• Are ages 21-65
• Have three (3) or more of the following:
> Waist measurement: Men 40 inches or more OR Women 35 inches or more
> High blood pressure >130/85 OR are taking blood pressure medication
> High fasting glucose (>100mg/dL)
> High triglycerides (>150 mg/dL)
> HDL-C (high-density lipoprotein cholesterol—the “good” cholesterol) of less than 40 mg/dL for men or less than 50 mg/dL for women
• Do NOT smoke or have high cholesterol, diabetes, liver disease, kidney disease.
• Are NOT pregnant or lactating.
